Cheesecake Origins

Cheesecake is the favored dessert of so many that it makes you wonder who thought of such an amazing dish? Though some rough versions are reported to have appeared on the scene as long ago as 230 A.D, John J. Sergreto, author of the book “Cheesecake Madness”, reports that the Greeks introduced a version close to what we know today in the year 1000 A.D.

The New York Style Cheesecake is most commonly thought of as “real cheesecake”. It’s first appearance was in 1929 at the famous Turf Restaurant in the heart of Manhattan. It is said that owner Aaron Reuben credited his family with developing the delicious cream cheese based New York Style Cheesecake. Thank you, Ruben Family!

New York Style Cheesecake

Easy Cheesecake Recipe

This recipe for cheesecake can be made with just 10 minutes prep-time and another 40 minutes for baking. It tastes simply delicious. Serves 6-8. Perfect served with whipped cream and/or fruit pie filling toppers--try blueberry!

Ingredients:

2 8 oz. packages of Philadelphia® brand cream cheese, softened

1/2 cup sugar

1/2 tsp. vanilla extract

2 eggs

graham cracker crust

Preheat oven to 350°. Blend 2 packages of cream cream cheese together with sugar & vanilla, using an electric mixer. Add 2 eggs and mix until well-blended. Pour the creamy batter into a ready-made graham cracker pie crust.

Bake at 350° for 40 minutes or until center is almost set. Cool and refrigerate 3 hours or overnight.

TIP: Though it calls for refrigeration, take it out of the refrigerator at least one hour prior to dinner. Let it come close to room temperature. The texture will be creamier and it tastes awesome!

Rich Chocolate-Marble Cheesecake

Chocolate cheesecake is a great variation of the traditional dessert. This particular recipe is a challenge to serve. It takes some dexterity to get out of the pan. But, oh how amazing it tastes. It's worth the effort!

Serve with a dollop of Cool Whip™ or whipped cream and some chocolate shavings and look like a baking expert!

Ingredients:

1 cup sugar

3 pkgs (8 oz) cream cheese

5 large eggs

1 T vanilla

1 T lemon juice

1 4oz pkg Baker's™ German Semi-sweet chocolate

Using an electric mixer, blend pre-softened cream cheese with sugar. One at a time, add all 5 eggs. Add vanilla. Melt the chocolate in the microwave or over low heat on the stove. Take 2 cups of the mixture ad fold in melted chocolate. To the remains, add lemon juice. Butter a 9-10 inch pie pan, using butter. Put the mixture with the lemon in the pan. Add the chocolate batter to the middle. Using a knife, marble slightly. Bake in a preheated oven at 350° for 40-45 minutes. Cool. Serve with whipped cream.

A former girlfriend introduced me to cheesecake when I was 22 years old. Before that, I had always avoided cheesecake because the thought of swiss or some other kind of cheese being in a cake did not sit well with me.

Ohh! What a surprise when I tasted the cheesecake she brought to me. It was wonderful! No cheese taste what so ever.

I have often eaten cheesecake since that day years and years ago. When ever I eat cheesecake I think of her. Fond memories of my former wonderful girlfriend and taking evening walks together putting stars on top of the tall pine trees.
